
Pumpkin Tres Leche Cake
Celebrate fall with a delicious twist on a classic tres leches cake. Made with pumpkin purée, warm spices, The Farmer’s Cow whole milk, and farm-fresh eggs, this tender sponge cake soaks up a rich three-milk mixture for an irresistibly moist and creamy texture. A generous layer of whipped cream and a dusting of cinnamon make every slice a cozy treat for fall gatherings or dessert at home.

Ingredients
- 5 The Farmer’s Cow large eggs, separated
- 1 cup sugar, divided
- 1 ¼ cup pumpkin puree
- 1 ½ tsp vanilla extract
- 1 ½ cups all-purpose flour
- 2 ½ tsp baking powder
- 1 tbsp pumpkin spice
- ½ tsp kosher salt
- 1 cup The Farmer’s Cow whole milk
- 1 can (14 oz.) sweetened condensed milk
- ¼ cup heavy cream
- Whipped cream, for topping
- ½ tsp cinnamon
Instructions
- Preheat oven to 350 degrees. Grease a 9x13 cake pan.
- Put the egg whites and 1/2 cup sugar in a large mixing bowl and beat on high until stiff peaks, about 3 to 4 minutes. Scoop into another bowl and set aside.
- Place the remaining 1/2 cup sugar and egg yolks in the bowl (no need to clean it out) and beat until pale yellow and doubled in volume. Add the pumpkin puree and vanilla and mix to combine.
- Place a sieve atop the bowl and sift in the flour, baking powder, pumpkin spice, and salt. Mix until just combined.
- Fold in the egg whites until you no longer see any speckles of remaining egg white.
- Pour the batter into the prepared 9×13 cake pan and transfer to the oven to bake for 15 to 18 minutes, until a skewer when inserted into the center comes out clean. Let cool completely in the pan before proceeding with the rest of the recipe.
- In a large measuring cup, add whole milk, sweetened condensed milk, and heavy cream. Whisk until combined. Using a skewer, create little holes on the top of the cake. Pour the milk mixture over the cake (it may seem like a lot, but it will absorb!). Transfer to the fridge for at least 2 to 3 hours, ideally overnight.
- Just before serving, top the cake with fluffy whipped cream and dust with cinnamon or pumpkin pie spice. Slice and serve.
