The Farmer’s Cow Milk Pudding Cubes
This is a fun and easy recipe with four simple ingredients! Milk pudding is super rich and soft; one bite and it melts into your mouth. The initial preparation takes only 10 minutes, and it needs to be set in the fridge for an additional two hours. It is a perfect summertime snack or picnic dessert.
Yield: 4 servings
Ingredients
- 2 cups The Farmer’s Cow Whole Milk
- 1/3 cup corn starch
- 1/3 cup sugar
- 1 cup unsweetened coconut flakes
Instructions
- Pour 1 cup of milk in a small sauce pan and add sugar. Stir until dissolved
- Cook on medium low heat until the mixture is warm. Do no simmer or boil.
- While the milk mixture is warming, combine the remaining milk and cornstarch in a bowl and mix until smooth.
- Slowly pour the milk and cornstarch mixture into the milk and sugar mixture in the saucepan and continued cooking on medium low heat for 4 to 5 minutes until thickened. Do not simmer (lower heat if necessary).
- When thickened, pour into a parchment paper-lined 8x8 pan and place in the refrigerator for 1-2 hours.
- After the set, cut the pudding into cubes and roll each piece in the coconut flakes.
- Serve with fresh fruit.
- Keep refrigerated.
Tips
- This recipe is very versatile. Have fun and experiment with different flavor options such as:
- Citrus by mixing a teaspoon of lemon or lime zest into the coconut flakes
- Spice to mixing a dash of cinnamon or cardamon into the coconut flakes
- Fruit by dipping the cubes in strawberry or blueberry syrup or glaze before rolling in the coconut
- Finley shredded coconut works best to stick to the pudding cubes. If you don’t have fine coconut, pulse it in a food processor or blender before rolling or mixing with flavor options.
