The Farmer’s Cow Mexican Horchata

A refreshing cold drink perfect for hot days. It's made with rice, cinnamon, vanilla, and creamy milk, giving it the flavor of rice pudding but in liquid form. This delicious make-at-home treat strikes the perfect balance between sweet and creamy with a hint of spice.

Yield: 10 to 12 servings

Ingredients

  • 2 cups long grain rice
  • 1 cinnamon stick
  • 4 cups + ¼ cup boiling water, divided
  • 2 cups The Farmer’s Cow Milk (2% or Whole)
  • ¾ cup sugar
  • 2 tsp vanilla

Instructions

  • Rinse the rice and place it in a large glass bowl with boiling water and cinnamon stick. Cover and let soak for 8 hours or overnight to soften the rice and infuse it with the cinnamon flavor.
  • Pour the softened rice mixture into a blender and process until it becomes a smooth, watery paste.
  • Using a strainer or sieve, pour the blended mixture into a wide-mouth pitcher, stirring to help the liquid pass through. Discard any solids.
  • Add the milk and vanilla extract.
  • Combine the sugar with ¼ cups of boiling water and stir to dissolve into a simple syrup. Let it cool to room temperature before adding it to the milk mixture.
  • Let the drink chill in the refrigerator, then taste to adjust the sugar or add milk or water if it is too sweet or too thick.
  • Stir and serve over ice cubes topped with a dusting of cinnamon.
