Sweet Potato Casserole

Yield: Serves 6 to 8.

Ingredients

  • 3 cups mashed sweet potatoes
  • 1 cup brown sugar
  • 2 large Farmer’s Cow eggs, lightly beaten
  • 1 tsp vanilla
  • 1/2 cup Farmer’s Cow milk
  • 1/2 cup melted butter

Streusel

  • 1/2 cup brown sugar
  • 1/3 cup flour
  • 1/3 cup melted butter
  • 1 cup chopped pecans

Directions

  • Preheat the oven to 350 degrees.
  • Combine the first 6 ingredients and stir to blend thoroughly.
  • Pour mixture into a buttered 1 1/2 or 2-quart casserole dish.
  • Mix the streusel ingredients together and sprinkle over top.
  • Bake for 30 to 40 minutes, until hot and browned.
