Sweet Potato Casserole
Yield: Serves 6 to 8.
Ingredients
- 3 cups mashed sweet potatoes
- 1 cup brown sugar
- 2 large Farmer’s Cow eggs, lightly beaten
- 1 tsp vanilla
- 1/2 cup Farmer’s Cow milk
- 1/2 cup melted butter
Streusel
- 1/2 cup brown sugar
- 1/3 cup flour
- 1/3 cup melted butter
- 1 cup chopped pecans
Directions
- Preheat the oven to 350 degrees.
- Combine the first 6 ingredients and stir to blend thoroughly.
- Pour mixture into a buttered 1 1/2 or 2-quart casserole dish.
- Mix the streusel ingredients together and sprinkle over top.
- Bake for 30 to 40 minutes, until hot and browned.
