Ingredients

  • 3 cups mashed sweet potatoes (about 3 large or 6 small sweet potatoes)
  • 1 cup light brown sugar
  • 2 The Farmer’s Cow large eggs, lightly beaten
  • 1 tsp vanilla
  • ½ cup The Farmer’s Cow milk
  • ½ cup melted butter

Streusel

  • ½ cup light brown sugar
  • 1/3 cup flour
  • 1/3 cup melted butter
  • 1 cup chopped pecans

Instructions

  1. Preheat the oven to 350 degrees.
  2. Combine the first 6 ingredients and stir to blend thoroughly.
  3. Pour mixture into a buttered 1 ½ or 2-quart casserole dish.
  4. Mix the streusel ingredients together and sprinkle over the top.
  5. Bake for 30 to 40 minutes, until hot and lightly browned.
