
Street Corn Pasta Salad
This creamy summer side brings together sweet corn, tender zucchini, juicy tomatoes, and a tangy milk-lime dressing made with The Farmer’s Cow whole milk. Inspired by the flavors of street corn but made picnic-friendly, it’s colorful, wholesome, and easy to share. Serve chilled with burgers, grilled chicken, or as a satisfying light meal on its own.

Ingredients
Pasta Salad
- 12 oz small pasta, such as baby shells or ditalini
- 4 cups of fire-roasted sweet corn (frozen or grilled on the cob)
- 1 tbsp olive oil
- 1 small zucchini, diced small
- 1 jalapeño pepper, diced small
- ½ cup red onion, finely chopped
- ½ cup scallions, chopped
- ½ cup fresh cilantro or parsley
- ¾ cup crumbled cotija or feta cheese
- 1 cup cherry or grape tomatoes, halved
- ½ tsp kosher salt
- ½ tsp ground black pepper
Milk-Lime Dressing
- ½ cup The Farmer’s Cow whole milk
- ½ cup sour cream or plain Greek yogurt
- ¼ cup mayonnaise
- 2 tbsp fresh lime juice
- 2 cloves garlic, minced
- 1 tsp honey
- 1 tsp chili powder
- ½ tsp smoked paprika
- ½ tsp kosher salt, or to taste
- Pinch of cayenne or a few dashes of hot sauce
Directions
- Bring a large pot of salted water to a boil. Cook pasta according to package directions until al dente. Drain and rinse briefly under cool water. Set aside.
- Heat olive oil in a large skillet over medium heat. Add zucchini and frozen corn kernels (if using), and cook for 6 to 8 minutes, stirring occasionally, until vegetables are tender. Season with salt and pepper, and let cool slightly.
- In a medium bowl, whisk together all of the dressing ingredients, taste and adjust seasoning as needed.
- In a large bowl, combine pasta, cooked vegetables, red onion, scallions, tomatoes, herbs, and cheese. Pour dressing over everything and toss until evenly coated. Refrigerate for at least 30 minutes before serving.
Farm Kitchen Tips
- For a milder kid-friendly version, skip the jalapeno and cayenne or hot sauce.
- If making ahead, reserve a few tablespoons of dressing to freshen the salad before serving.
- Just before serving, sprinkle with extra cheese, herbs, and crushed tortilla chips or chili-lime seasoning.
