Spinach Squares
This recipe is from an old church recipe book from New Hampshire and credited to Mabelle Summers. It is a great appetizer for entertaining around the holidays because it can be made ahead and served at room temp, or warmed slightly.

Prep Time: 10 minutes
Cooking Time: 35 minutes
Ingredients
- 4 tbsp Butter
- 3 The Farmer’s Cow Eggs
- 1 cup flour
- 1 cup The Farmer’s Cow Milk
- 1 (10 oz.) Pkg. Frozen Spinach (thawed and drained)
- 1 small onion (chopped)
- 1 tsp salt
- 1 tsp baking powder
- 1 pound grated cheddar cheese
- 1/2 cup mushrooms (sliced)
Directions
- Preheat the oven to 350 degrees
- Melt butter in a 9 X 13 inch pan.
- Mix remaining ingredients together and spoon into pan.
- Bake for 35 minutes. Cool slightly before cutting into squares.
- Serve hot or at room temperature.
