Spinach Squares

This recipe is from an old church recipe book from New Hampshire and credited to Mabelle Summers. It is a great appetizer for entertaining around the holidays because it can be made ahead and served at room temp, or warmed slightly.

Prep Time: 10 minutes
Cooking Time: 35 minutes

Ingredients

  • 4 tbsp Butter
  • 3 The Farmer’s Cow Eggs
  • 1 cup flour
  • 1 cup The Farmer’s Cow Milk
  • 1 (10 oz.) Pkg. Frozen Spinach (thawed and drained)
  • 1 small onion (chopped)
  • 1 tsp salt
  • 1 tsp baking powder
  • 1 pound grated cheddar cheese
  • 1/2 cup mushrooms (sliced)

Directions

  • Preheat the oven to 350 degrees
  • Melt butter in a 9 X 13 inch pan.
  • Mix remaining ingredients together and spoon into pan.
  • Bake for 35 minutes. Cool slightly before cutting into squares.
  • Serve hot or at room temperature.
