Scalloped Corn
I usually double, and often triple, this recipe. For a holiday meal, I usually prepare the dish the day before and bake it the next day. ENJOY!!!!

Ingredients
- 2 tbsp butter
- 1/2 tbsp flour
- 1 cup The Farmer’s Cow milk
- 2 The Farmer’s Cow eggs, well beaten
- 2 cups corn
- 1 tsp sugar (optional)
- Salt and pepper
Directions
- Preheat the oven to 350.
- Melt butter in a medium saucepan, and stir in flour. Add milk to form a thick white sauce.
- When mixture thickens and comes to a slow boil, add 2 well-beaten eggs (Hint: stir 2 spoonfuls of white sauce into the egg first to prevent eggs from separating).
- Add corn, 1 tsp sugar (if desired), and salt and pepper to taste.
- Transfer to an oven safe baking dish.
- Bake at 350 for up to 1 hour.
