Scalloped Corn

I usually double, and often triple, this recipe. For a holiday meal, I usually prepare the dish the day before and bake it the next day. ENJOY!!!!

Ingredients

  • 2 tbsp butter
  • 1/2 tbsp flour
  • 1 cup The Farmer’s Cow milk
  • 2 The Farmer’s Cow eggs, well beaten
  • 2 cups corn
  • 1 tsp sugar (optional)
  • Salt and pepper

Directions

  • Preheat the oven to 350.
  • Melt butter in a medium saucepan, and stir in flour. Add milk to form a thick white sauce.
  • When mixture thickens and comes to a slow boil, add 2 well-beaten eggs (Hint: stir 2 spoonfuls of white sauce into the egg first to prevent eggs from separating).
  • Add corn, 1 tsp sugar (if desired), and salt and pepper to taste.
  • Transfer to an oven safe baking dish.
  • Bake at 350 for up to 1 hour.
