Rice Pudding a la Italiana
A great twist on traditional rice pudding with the addition of Amaretto!
Yield: 6 to 8 servings
Ingredients
- 4 cups The Farmer’s Cow milk
- 1/4 pound butter
- 3/4 cup sugar
- 1 cup Arborio rice
- 1 The Farmer’s Cow egg
- 1 tsp vanilla
- 1 1/2 ounces amaretto
- Cinnamon for dusting
Directions
- Combine the milk, butter, and sugar in a large saucepan and bring to a slow boil. Add the rice. Lower the heat to simmer and cook for 45 minutes, stirring often.
- Beat together the egg, vanilla, and Amaretto and slowly add to the rice as it finishes cooking, stirring constantly to temper the egg mixture.
- Mix thoroughly and let stand to room temperature or chill in the refrigerator.
- Sprinkle each serving with cinnamon and enjoy!
