Rice Pudding a la Italiana

A great twist on traditional rice pudding with the addition of Amaretto!

Yield: 6 to 8 servings

Ingredients

  • 4 cups The Farmer’s Cow milk
  • 1/4 pound butter
  • 3/4 cup sugar
  • 1 cup Arborio rice
  • 1 The Farmer’s Cow egg
  • 1 tsp vanilla
  • 1 1/2 ounces amaretto
  • Cinnamon for dusting

Directions

  • Combine the milk, butter, and sugar in a large saucepan and bring to a slow boil. Add the rice. Lower the heat to simmer and cook for 45 minutes, stirring often.
  • Beat together the egg, vanilla, and Amaretto and slowly add to the rice as it finishes cooking, stirring constantly to temper the egg mixture.
  • Mix thoroughly and let stand to room temperature or chill in the refrigerator.
  • Sprinkle each serving with cinnamon and enjoy!
