Opa! Greek Quiche
Our farm-tested recipe is flavorful and satisfying for breakfast, lunch, or dinner. Serve straight out of the pan with a simple side salad for a no-fuss meal and no extra dishes to wash.
Yield: Serves 6
Ingredients
- 1 tbsp olive oil
- 1 cup cherry tomatoes, halved
- 2/3 cup bell pepper, finely chopped
- ½ cup red onion, thinly sliced
- 2/3 cup fresh spinach, chopped
- 2 garlic cloves, minced
- 1 cup feta cheese, crumbled
- ½ cup Greek olives, pitted and sliced
- 6 The Farmer’s Cow large eggs
- 1 cup The Farmer’s Cow milk
- 1 tbps minced fresh oregano or 1 tsp dried oregano
- ½ tsp salt
- 1/8 to ¾ tsp crushed red pepper flakes to taste
Instructions
- Preheat oven to 375°F.
- Heat olive oil in a 9-inch oven-proof skillet or cast iron pan over medium-high heat. Add tomatoes, peppers, and onion and cook until vegetables are tender, stirring occasionally.
- Drain and add spinach and garlic and cook until spinach is wilted (about 2 minutes).
- Remove from heat and stir in feta and olives.
- Whisk eggs, milk, oregano, salt, and pepper in a large bowl until well blended. Pour mixture over vegetables.
- Place skillet in oven and bake until a knife inserted in the center comes out clean, about 20-25 minutes.
- Let stand for ten minutes before serving and enjoy!
