Opa! Greek Quiche

Our farm-tested recipe is flavorful and satisfying for breakfast, lunch, or dinner. Serve straight out of the pan with a simple side salad for a no-fuss meal and no extra dishes to wash.

Yield: Serves 6

Ingredients

  • 1 tbsp olive oil
  • 1 cup cherry tomatoes, halved
  • 2/3 cup bell pepper, finely chopped
  • ½ cup red onion, thinly sliced
  • 2/3 cup fresh spinach, chopped
  • 2 garlic cloves, minced
  • 1 cup feta cheese, crumbled
  • ½ cup Greek olives, pitted and sliced
  • 6 The Farmer’s Cow large eggs
  • 1 cup The Farmer’s Cow milk
  • 1 tbps minced fresh oregano or 1 tsp dried oregano
  • ½ tsp salt
  • 1/8 to ¾ tsp crushed red pepper flakes to taste

Instructions

  • Preheat oven to 375°F.
  • Heat olive oil in a 9-inch oven-proof skillet or cast iron pan over medium-high heat. Add tomatoes, peppers, and onion and cook until vegetables are tender, stirring occasionally.
  • Drain and add spinach and garlic and cook until spinach is wilted (about 2 minutes).
  • Remove from heat and stir in feta and olives.
  • Whisk eggs, milk, oregano, salt, and pepper in a large bowl until well blended. Pour mixture over vegetables.
  • Place skillet in oven and bake until a knife inserted in the center comes out clean, about 20-25 minutes.
  • Let stand for ten minutes before serving and enjoy!
