Marlborough Pie
This recipe was the 1st place winner in the 2008 Celebrating CT Agriculture 2008 contest.
Ingredients
- Crust for an 8″ lattice top pie
- 2 tart apples, peeled and grated (approximately 1 cup)
- 1/2 cup granulated sugar
- 3 tbsp butter
- 1 The Farmer’s Cow Egg, well-beaten
- 1 lemon, including grated zest and juice
- 1/2 cup The Farmer’s Cow whole milk
Directions
- Prepare your favorite crust for an 8” lattice top pie.
- Preheat the oven to 380 degrees.
- Cream butter and sugar, add the well-beaten egg, and stir to combine.
- Peel and grate the apple with a box grater. Tip: rub the grater and work surface with lemon to prevent browning.
- Add grated apple along with lemon juice and zest to the egg mixture.
- Add whole milk and stir to combine all ingredients.
- Pour mixture into prepared crust and cover with lattice top. Tip: brush with beaten egg and sprinkle with coarse sparkling sugar.
- Bake for 30-40 minutes until the crust is nicely browned.
- Cool, cut, and enjoy!
