Marlborough Pie

This recipe was the 1st place winner in the 2008 Celebrating CT Agriculture 2008 contest.

Ingredients

  • Crust for an 8″ lattice top pie
  • 2 tart apples, peeled and grated (approximately 1 cup)
  • 1/2 cup granulated sugar
  • 3 tbsp butter
  • 1 The Farmer’s Cow Egg, well-beaten
  • 1 lemon, including grated zest and juice
  • 1/2 cup The Farmer’s Cow whole milk

Directions

  • Prepare your favorite crust for an 8” lattice top pie.
  • Preheat the oven to 380 degrees.
  • Cream butter and sugar, add the well-beaten egg, and stir to combine.
  • Peel and grate the apple with a box grater. Tip: rub the grater and work surface with lemon to prevent browning.
  • Add grated apple along with lemon juice and zest to the egg mixture.
  • Add whole milk and stir to combine all ingredients.
  • Pour mixture into prepared crust and cover with lattice top. Tip: brush with beaten egg and sprinkle with coarse sparkling sugar.
  • Bake for 30-40 minutes until the crust is nicely browned.
  • Cool, cut, and enjoy!
