Loaded Nachos with Farmhouse Queso

Everyone will dig into this game-day treat with one pan and big flavors! It is endlessly customizable, made with crispy chips, hot and cold toppings, and finished with silky queso and fresh milk-lime crema made with The Farmer’s Cow whole milk. It’s a crowd-pleasing, build-your-own snack that bakes in minutes and keeps everyone happy from kickoff to the final play.

Ingredients

Nachos

  • Sturdy tortilla chips (thick-cut)
  • 2 cups cooked protein (shredded chicken, taco meat, or black beans)
  • 1 cup black beans (if not using as protein)
  • 1 cup corn (frozen or canned, drained)
  • 1–2 jalapeños, sliced
  • 1 cup shredded cheese (cheddar/Monterey Jack) for the base melt
  • Fresh toppings (optional)
    • Diced tomato
    • Red onion, chopped
    • Cilantro
    • Sliced olives
    • Pickled jalapeños
    • Diced avocado
    • Salsa

 

10‑Minute Farmhouse Queso

  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 1 ¾ cups The Farmer’s Cow whole milk, warmed
  • 8 oz freshly shredded cheddar (or 6 oz cheddar + 2 oz pepper jack)
  • ¼ tsp each: garlic powder, cumin
  • ½ tsp kosher salt (to taste)
  • Optional mix-ins: 1 can diced green chiles (drained), pinch of smoked paprika, splash of hot sauce

Lime Crema Drizzle

  • ½ cup sour cream
  • 2–3 tbsp The Farmer’s Cow whole milk
  • 1 tsp lime juice
  • pinch of salt

Directions

  • Prepare the Queso by melting butter in a saucepan over medium heat. Stir in flour; cook 1 minute.
  • Gradually whisk in warm TFC milk until smooth and lightly thickened, about 3–4 minutes.
  • Remove from heat and add shredded cheese a handful at a time, stirring until silky.
  • Season with garlic powder, cumin, and salt; fold in green chiles if using. Keep warm on low.
  • Make the crema by mixing all ingredients and set aside until ready to serve.
  • Heat oven to 400°F and line a rimmed sheet pan with parchment paper.
  • Spread chips in an even layer and scatter the shredded base cheese, protein, beans, corn, and jalapeños.
  • Place in the hot oven and bake for 6–8 minutes until the cheese melts and edges crisp.
  • Pull nachos from the oven. Spoon or drizzle warm queso over the top. Add fresh toppings and a quick swirl of milk-lime crema. Serve immediately with extra queso on the side.
