Leftover Turkey Casserole
Every time the holidays roll around, we end up with a mountain of leftovers. Leftover Turkey Casserole is a go-to way to use them up deliciously. It’s an indulgent, satisfying dish that comes together in under 45 minutes—ideal for those busy days after big family gatherings. With every bite, you get to savor the flavors of the holiday all over again, but in a brand-new way! It truly feels like a warm hug from the kitchen.

Ingredients
- 4 tbsp butter
- ¼ cup all-purpose flour
- ½ tsp kosher salt
- ½ tsp pepper
- 1 small onion, diced
- 1 cup fresh mushrooms, chopped
- 1 cup turkey gravy
- 1 cup The Farmer’s Cow Milk
- 1 cup mozzarella, shredded
- 3 cups cornbread, cut into 1” chunks
- 3 cups cooked turkey meat, chopped
- 1 cup frozen mixed veggies
Directions
- Preheat the oven to 350 degrees.
- Melt the butter in a medium-sized saucepan. Add onions and mushrooms, and sauté until soft, about 5 minutes.
- Add the flour, stir to combine well, and cook for 1 minute before adding the milk, ½ cup of gravy, and mozzarella, whisking until smooth.
- Add the cornbread, turkey, frozen veggies and mix gently to combine.
- Pour the mixture into a 9×13 pan and cover with the rest of the gravy.
- Place in the hot oven and bake for 20-25 minutes covered, followed by 10 minutes uncovered.
