Irish Soda Bread with Homemade Buttermilk

Yield: 12 servings

Ingredients

Homemade buttermilk

  • 2 tbsp white vinegar (or fresh lemon juice)
  • 2 cups The Farmer's Cow milk

Soda Bread

  • 4 cups flour
  • 1 ½ tsp salt
  • 1 tsp  baking soda
  • 2 cups buttermilk
  • 1 cup golden raisins (or dried currants)

Directions

Step 1: Make the buttermilk

  • Place white vinegar (or fresh lemon juice) in a glass measuring cup, and add enough milk to create 2 cups total liquid.
  • Stir to combine and let stand at room temperature until the mixture starts to thicken (15 minutes to 1 hour). The buttermilk is now cultured and can be used in your recipe.

Step 2: Prepare the bread dough

  • Preheat the oven to 375
  • Grease a baking sheet or an 8” round cake pan or cast-iron skillet
  • In a large mixing bowl, stir and toss together the flour, salt, baking soda, and golden raisins (or dried currants)
  • Add buttermilk and stir briskly with a fork until the dough holds together in a rough mass
  • Turn out onto a floured surface and knead lightly into a round loaf

Step 3: Bake and enjoy!

  • Place the formed dough on the prepared baking sheet or cake pan
  • With a sharp knife, slash a large X into the top of the loaf
  • Place in the hot oven and bake for 45-50 minutes until it is nicely browned and the X has cracked open
  • Cool on a baking rake and serve at room temperature
