Irish Soda Bread with Homemade Buttermilk

Ingredients
Homemade buttermilk
- 2 tbsp white vinegar (or fresh lemon juice)
- 2 cups The Farmer's Cow milk
Soda Bread
- 4 cups flour
- 1 ½ tsp salt
- 1 tsp baking soda
- 2 cups buttermilk
- 1 cup golden raisins (or dried currants)
Directions
Step 1: Make the buttermilk
- Place white vinegar (or fresh lemon juice) in a glass measuring cup, and add enough milk to create 2 cups total liquid.
- Stir to combine and let stand at room temperature until the mixture starts to thicken (15 minutes to 1 hour). The buttermilk is now cultured and can be used in your recipe.
Step 2: Prepare the bread dough
- Preheat the oven to 375
- Grease a baking sheet or an 8” round cake pan or cast-iron skillet
- In a large mixing bowl, stir and toss together the flour, salt, baking soda, and golden raisins (or dried currants)
- Add buttermilk and stir briskly with a fork until the dough holds together in a rough mass
- Turn out onto a floured surface and knead lightly into a round loaf
Step 3: Bake and enjoy!
- Place the formed dough on the prepared baking sheet or cake pan
- With a sharp knife, slash a large X into the top of the loaf
- Place in the hot oven and bake for 45-50 minutes until it is nicely browned and the X has cracked open
- Cool on a baking rake and serve at room temperature
