German Apple Pancake

Ingredients
- 3 The Farmer’s Cow Large Eggs
- 1 cup The Farmer’s Cow Milk
- ¾ cup flour
- ½ tsp salt
- 1/8 tsp nutmeg
- 3 tbsp butter
- 2 tart baking apples, peeled and sliced
- 3 to 4 tbsp butter
- 2 tbsp sugar
- Powdered sugar
Directions
- Preheat a 10” cast iron skillet in a 425-degree oven
- In a blender, combine eggs, milk, flour, salt, and nutmeg, cover, and process until smooth
- Put the butter in the hot skillet, and return to the oven until the butter bubbles (do not burn)
- Remove from the oven and pour batter into the skillet
- Bake, uncovered for 20 minutes until the pancake puffs and edges are browned and crisp
- While the pancake is baking, make the topping by combining apples, butter, and sugar in a skillet; cook and stir over medium heat until apples are tender
- Spoon topping over the baked pancake and sprinkle with powdered sugar
- Cut and serve immediately
