German Apple Pancake

Ingredients

  • 3 The Farmer’s Cow Large Eggs
  • 1 cup The Farmer’s Cow Milk
  • ¾ cup flour
  • ½ tsp salt
  • 1/8 tsp nutmeg
  • 3 tbsp butter
  • 2 tart baking apples, peeled and sliced
  • 3 to 4 tbsp butter
  • 2 tbsp sugar
  • Powdered sugar

Directions

  • Preheat a 10” cast iron skillet in a 425-degree oven
  • In a blender, combine eggs, milk, flour, salt, and nutmeg, cover, and process until smooth
  • Put the butter in the hot skillet, and return to the oven until the butter bubbles (do not burn)
  • Remove from the oven and pour batter into the skillet
  • Bake, uncovered for 20 minutes until the pancake puffs and edges are browned and crisp
  • While the pancake is baking, make the topping by combining apples, butter, and sugar in a skillet; cook and stir over medium heat until apples are tender
  • Spoon topping over the baked pancake and sprinkle with powdered sugar
  • Cut and serve immediately
