
Farmstand Sweet Potato Hash & Eggs

Ingredients
- 2 large sweet potatoes, peeled and diced into uniform ½-inch cubes
- Salt and pepper to taste
- 1 large yellow onion, diced
- 1 cup bell pepper, diced
- 3 tbsp olive oil
- 1 tsp smoked paprika
- ½ tsp ground cumin
- 1 tsp fresh sage leaves (or ½ tsp dried)
- 2 cloves garlic, minced
- 4 The Farmer’s Cow large eggs
- 1 tbsp butter
- 2 green onions, sliced
Instructions
- Heat 2 tbsp oil in a large cast-iron or heavy skillet over medium-high heat. Add diced sweet potatoes in a single layer. Season with salt and pepper and cook without stirring for 4 to 5 minutes until the bottoms are golden brown.
- Stir in onions and bell pepper. Add the remaining 1 tbsp oil, if needed. Cook for 5-7 minutes, stirring occasionally.
- Add paprika, cumin, thyme, and minced garlic. Stir and cook for another 3 to 4 minutes until the sweet potatoes are tender with crispy edges and everything is well seasoned. Reduce the heat to low or keep-warm setting while you prepare the eggs.
- In a separate pan, fry or poach the eggs as desired. Serve on top the hash and garnish with sliced green onions or a sprinkle of fresh chopped parsley.
