Farmhouse Egg Salad

The Farmer’s Cow hard cooked eggs are the star of this creamy classic kicked up with ham, fresh dill, and flavorful mustard.

Yield: 4 Servings

 Ingredients

  • 6 The Farmer’s Cow hard cooked eggs
  • ½ cup diced ham
  • 1 rib celery, finely chopped
  • ¼ cup red or sweet onion, finely chopped
  • 1 tbsp chopped fresh dill
  • 1 tbsp Dijon or spicy brown mustard
  • ¼ cup mayonnaise
  • 1 tbsp pickle juice (dill or half sour)
  • Freshly ground black pepper
  • Seasoned salt to taste

Instructions

  • Peel and chop the eggs with an egg slicer or mash with a potato masher to desired consistency and place them in a medium bowl.
  • Add ham, celery, onion, dill, mustard, mayo, and pickle juice. Stir well to combine.
  • Season to taste with pepper and seasoned salt.
  • Serve on lettuce leaves or in a sandwich.
