Farmhouse Cheddar Ham Chowder
Our farm-tested recipe is pure comfort food made with simple, wholesome ingredients. It is a delicious option for a quick home-cooked lunch or dinner any day of the week. Serve with some crusty bread or crackers for a complete meal that everyone will love!
Yield: 8 servings (2 quarts)
Ingredients
- 2 cups cold water
- 2 – 3 russet potatoes, peeled and diced
- 1 carrot, diced
- 1 celery stalk, diced
- 1 small onion, chopped
- 1 tsp salt
- ¼ tsp pepper
- 4 tbsp butter
- ¼ cup flour
- 2 cups The Farmer’s Cow low-fat milk
- 2 cups shredded cheddar cheese
- 1 can whole kernel corn, drained (15 ¾ oz)
- 1 ½ cups cubed fully cooked ham
- Scallions or chopped chives for garnish
Instructions
- Put potatoes, carrots, celery, and onion in a large saucepan, add water, salt, and pepper, and bring to a boil. Reduce heat to a gentle simmer and cover for 8-10 minutes until vegetables are fork tender. Remove from heat; do not drain.
- Meanwhile, melt butter in another large saucepan. Stir in flour until smooth, and gradually add milk. Bring to a boil and cook, stirring constantly for 2 minutes or until thickened.
- Add cheese and stir until melted. Pour the milk and cheese mixture into the undrained vegetables and return the pan to the heat. Add corn and ham, and heat through, stirring occasionally.
- Serve and enjoy!
