Farmers Breakfast Casserole

Our make-ahead recipe is best prepared the night before to be served hot and fresh from the oven on busy mornings.

Yield: Serves 6

Ingredients

  • 3 cups frozen shredded hash brown potatoes
  • ¾ cup shredded Monterey Jack or Cheddar cheese
  • 1 cup cubed fully cooked ham
  • ¼ cup (or more to taste) chopped green onions
  • 4 The Farmer’s Cow large eggs
  • 1 cup The Farmer’s Cow milk
  • ¼ tsp pepper
  • 1/8 tsp salt

Instructions

  • Spread potatoes in an 8” baking dish and top with cheese, ham, and onions.
  • Whisk eggs, milk, pepper, and salt together, pour mixture over the prepared ingredients in the baking dish, cover, and refrigerate for several hours or overnight.
  • Remove from refrigerator 30 minutes before baking and preheat oven to 350 degrees.
  • Bake uncovered for 55-60 minutes, or until a knife inserted in the center comes out clean.
