Farmers Breakfast Casserole
Our make-ahead recipe is best prepared the night before to be served hot and fresh from the oven on busy mornings.
Yield: Serves 6
Ingredients
- 3 cups frozen shredded hash brown potatoes
- ¾ cup shredded Monterey Jack or Cheddar cheese
- 1 cup cubed fully cooked ham
- ¼ cup (or more to taste) chopped green onions
- 4 The Farmer’s Cow large eggs
- 1 cup The Farmer’s Cow milk
- ¼ tsp pepper
- 1/8 tsp salt
Instructions
- Spread potatoes in an 8” baking dish and top with cheese, ham, and onions.
- Whisk eggs, milk, pepper, and salt together, pour mixture over the prepared ingredients in the baking dish, cover, and refrigerate for several hours or overnight.
- Remove from refrigerator 30 minutes before baking and preheat oven to 350 degrees.
- Bake uncovered for 55-60 minutes, or until a knife inserted in the center comes out clean.
