Creamy White Chicken Chili
This creamy, kid-friendly slow cooker chili recipe is an easy, hearty dish everyone will love.
Yield: 9-10 Servings
Ingredients
- 1 lb uncooked boneless, skinless chicken breast
- ¾ cup uncooked quinoa
- 2 cups good chicken broth
- 1 ½ cups The Farmer’s Cow whole or low-fat milk
- 2 cups mild salsa
- 2 cloves garlic, minced
- 1 medium yellow onion, diced
- 2 bell peppers, diced
- 2 cups frozen corn
- 1 tbsp cumin
- 30 oz white beans (cannellini or great northern), drained and rinsed
- Optional Toppings
- Fresh cilantro, chopped
- Green onion, sliced
- Shredded cheese
- Sour cream
- Avocado, diced
- Tortilla chips
Instructions
- Combine quinoa, broth, milk, salsa, garlic, onion, peppers, corn, and cumin in a large bowl and stir to mix well.
- Pour a small amount of the mixture in a slow cooker, add chicken, and cover with the remaining mixture.
- Cover and cook for 2 ½ to 3 hours on high or 5-6 hours on low, until chicken breast is fully cooked and can be easily pulled apart with two forks.
- Transfer chicken breast to a cutting board or large plate and shred using two forks.
- Return chicken to the slow cooker, add white beans, and stir well to incorporate.
- Cover and cook for another ½ hour on low to heat it through.
- Serve with your choice of toppings and enjoy!
