Cottage Cheese Egg Muffins

This is a quick and easy high-protein grab-and-go breakfast, lunch, or snack. It is keto-friendly and infinitely versatile with different add-in combinations. It’s also a great way to turn the odds and ends in your refrigerator into a tasty treat. Make the muffins ahead and keep them in the refrigerator for up to 5 days, or freeze them for up to 3 months.

Yield: 6 muffins

Ingredients

  • 3 The Farmer’s Cow Large Eggs
  • 1/2 cup cottage cheese
  • Salt and pepper to taste
  • 1 cup of add-in mixture (you will need 2 tbsp per muffin)

Add-In suggestions

    • Diced tomato and chopped spinach seasoned with oregano, topped with feta cheese
    • Crumbled or sliced sausage, and diced peppers and onions seasoned with fresh dill
    • Chopped mushroom, shredded cheese, and fully cooked sausage
    • Chopped broccoli, chopped mushrooms, and fully cooked bacon
    • Chopped fully cooked bacon, goat cheese, and chopped spinach

Instructions

  • Preheat oven to 375 degrees and prepare a muffin tin with spray, grease, or liners.
  • Prepare add-ins mixture using your choice of herbs, veggies, meats, and cheeses. (Pictured in our recipe is fully cooked sausage cut into small pieces, diced onion, chopped mushrooms, and topped with a ¼ square of pepperjack cheese.
  • Crack eggs into a medium bowl and beat lightly. Add cottage cheese and mix thoroughly until combined. Season with salt and pepper to taste.
  • Place 2 tbsp add-ins in each muffin cup.
  • Pour the egg mixture over add-ins, dividing evenly between each cup almost to the top.
  • Top each cup with cheese if desired and bake in the preheated oven for 18 minutes, or just until the centers are set and they are lightly golden brown around the edges. Avoid overcooking or they will become spongy.
  • The egg muffins will puff up quite a bit as they bake and deflate as they cool. This is normal.
  • Allow the muffins to cool in the tin just enough to handle, then gently loosen them with a knife and remove from the pan and place on a wire rack.
  • Enjoy warm or refrigerate until ready to eat!
