Classic French Mushroom Soup

This is an indulgent soup that comes together quickly with just a few ingredients. The key is to use high-quality, fresh mushrooms, good chicken stock, and Whole Milk for a creamy, velvety texture. It has a distinctive taste, seasoned with garlic, sherry, and nutmeg. Adding soy sauce gives it a depth of umami flavor.

Yield: 6-8 servings

Ingredients

  • ¼ cup butter
  • 12 oz. sliced fresh mushrooms (about 4.5 cups)
  • 2 garlic cloves, minced
  • ¼ cup all-purpose flour
  • 2 cups chicken stock
  • 2 cups The Farmer’s Cow Whole Milk
  • ½ cup parsley, chopped
  • ¼ tsp salt
  • 1/8 tsp nutmeg
  • 1/8 tsp pepper
  • 1 tbsp soy sauce
  • 3 tbsp dry sherry

Directions

  • Melt butter in a large saucepan, add mushrooms and garlic, and cook for 5 minutes, stirring occasionally
  • Stir in the flour, mixing well. Slowly add the stock, followed by the milk. Bring to a boil, stirring constantly.
  • Reduce heat to simmer for 5 minutes and add parsley, salt, pepper, nutmeg, soy sauce, and sherry. Cook until the mixture is heated through, serve, and enjoy!
