Classic French Mushroom Soup
This is an indulgent soup that comes together quickly with just a few ingredients. The key is to use high-quality, fresh mushrooms, good chicken stock, and Whole Milk for a creamy, velvety texture. It has a distinctive taste, seasoned with garlic, sherry, and nutmeg. Adding soy sauce gives it a depth of umami flavor.
Yield: 6-8 servings
Ingredients
- ¼ cup butter
- 12 oz. sliced fresh mushrooms (about 4.5 cups)
- 2 garlic cloves, minced
- ¼ cup all-purpose flour
- 2 cups chicken stock
- 2 cups The Farmer’s Cow Whole Milk
- ½ cup parsley, chopped
- ¼ tsp salt
- 1/8 tsp nutmeg
- 1/8 tsp pepper
- 1 tbsp soy sauce
- 3 tbsp dry sherry
Directions
- Melt butter in a large saucepan, add mushrooms and garlic, and cook for 5 minutes, stirring occasionally
- Stir in the flour, mixing well. Slowly add the stock, followed by the milk. Bring to a boil, stirring constantly.
- Reduce heat to simmer for 5 minutes and add parsley, salt, pepper, nutmeg, soy sauce, and sherry. Cook until the mixture is heated through, serve, and enjoy!
