Cinnamon Streusel Coffee Cake

Ingredients
Cake
- 3 cups all-purpose flour
- 1 tbsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- 1 ½ cup granulated sugar
- 1 cup buttermilk or The Farmer’s Cow whole milk (get our homemade buttermilk recipe here)
- 1 cup melted butter
- 2 tsp pure vanilla extract
- 3 large The Farmer’s Cow eggs
Streusel
- 1 cup packed light brown sugar
- 2/3 cup all-purpose flour
- 3 tsp ground cinnamon
- ½ cup cold butter, cubed
- 1 cup roughly chopped pecans or walnuts
Glaze (optional)
- ½ cup powdered sugar
- 2 tbsp The Farmer’s Cow heavy cream, plus additional as needed
Instructions
- Preheat the over to 350 degrees F. Spray a tube pan with baking spray or grease it with butter and flour. Set aside.
- In a large bowl, sift flour, baking powder, baking soda, and salt. Then, mix together with a whisk.
- In a separate bowl whisk together the buttermilk (or whole milk), butter, vanilla and eggs.
- Add wet to dry ingredients. Mix until fully moistened and lumps are dissolved.
- In a medium size bowl, mix dry streusel ingredients together. Cut in butter using a pastry knife or rub with your hands until it resembles peas. Add chopped pecans or walnuts. Mix well.
- Spoon half of the cake batter into the pan. Sprinkle ½ streusel over batter, then top with the remaining batter and finish it with the remaining streusel mixture.
- Bake until cake is golden brown and a toothpick inserted into the center comes out clean, about 55 minutes.
- Cool in the pan on a baking rack for 30 minutes. Remove from the pan and cool completely.
- Mix the glaze ingredients together. Once the cake has cooled, drizzle glaze over the cake, and let drop down the sides. Let set for 5 minutes before serving.
