Cinnamon Streusel Coffee Cake

Ingredients

Cake

  • 3 cups all-purpose flour
  • 1 tbsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 ½ cup granulated sugar
  • 1 cup buttermilk or The Farmer’s Cow whole milk (get our homemade buttermilk recipe here)
  • 1 cup melted butter
  • 2 tsp pure vanilla extract
  • 3 large The Farmer’s Cow eggs

Streusel

  • 1 cup packed light brown sugar
  • 2/3 cup all-purpose flour
  • 3 tsp ground cinnamon
  • ½ cup cold butter, cubed
  • 1 cup roughly chopped pecans or walnuts

Glaze (optional)

  • ½ cup powdered sugar
  • 2 tbsp The Farmer’s Cow heavy cream, plus additional as needed

Instructions

  • Preheat the over to 350 degrees F. Spray a tube pan with baking spray or grease it with butter and flour. Set aside.
  • In a large bowl, sift flour, baking powder, baking soda, and salt. Then, mix together with a whisk.
  • In a separate bowl whisk together the buttermilk (or whole milk), butter, vanilla and eggs.
  • Add wet to dry ingredients. Mix until fully moistened and lumps are dissolved.
  • In a medium size bowl, mix dry streusel ingredients together. Cut in butter using a pastry knife or rub with your hands until it resembles peas. Add chopped pecans or walnuts. Mix well.
  • Spoon half of the cake batter into the pan. Sprinkle ½ streusel over batter, then top with the remaining batter and finish it with the remaining streusel mixture.
  • Bake until cake is golden brown and a toothpick inserted into the center comes out clean, about 55 minutes.
  • Cool in the pan on a baking rack for 30 minutes. Remove from the pan and cool completely.
  • Mix the glaze ingredients together. Once the cake has cooled, drizzle glaze over the cake, and let drop down the sides. Let set for 5 minutes before serving.
