Cinnamon Coffee Bars

Yield: 2 Dozen bars

Ingredients

  • 1/4 cup butter
  • 1 cup brown sugar (packed)
  • 1 The Farmers Cow egg
  • 1/2 cup hot coffee
  • 1 1/2 cups flour
  • 1 tsp. baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 1/2 tsp cinnamon
  • 1/2 cup chocolate chips
  • 1/4 cup chopped nuts
  • Quick cream icing
    • 1 cup powdered sugar
    • 1 tbsp margarine or softened butter
    • 1/2 tsp vanilla
    • 1 1/2 to 2 tbsp The Farmer’s Cow whole milk

Directions

  • Preheat the oven to 350 degrees, grease 9x9x2 baking dish and dust if with flour
  • Mix butter, sugar, and egg. Stir in coffee
  • Sift dry ingredients together. Stir into the wet mixture and blend in chocolate chips and nuts
  • Spread in prepared pan
  • Bake for 18 to 20 minutes and let cool
  • While the cake is cooling,  prepare the icing by mixing all ingredients together until smooth
  • When the cake is cool, spread icing thinly over the top of the warm cake and cut it into bars
