Cheeseburger Soup
Yield: 6 Servings
Ingredients
- 1 tbsp olive oil
- 1 lb ground beef
- 3/4 cup chopped onion
- 3/4 cup shredded carrots
- 3/4 cup diced celery
- 1 tsp dried basil
- 1 tsp dried parsley flakes
- 4 tbsp butter divided
- 3 cups chicken broth
- 4 cups peeled and diced potatoes
- 1/4 cup all-purpose flour
- 2 cups shredded cheddar cheese
- 1 1/2 cups The Farmer's Cow Milk
- 3/4 tsp salt
- 1/4 to 1/2 tsp pepper
- 1/4 cup sour cream
Instructions
- Heat the olive oil in a 4-quart pan or Dutch Oven and brown the ground beef. Drain and set aside.
- In the same pan, melt 1 tbsp butter and add onion, shredded carrots, celery, parsley, and basil. Sauté until tender.
- Add the broth, potatoes, and beef and bring to a boil. Reduce heat, cover and simmer for 10-12 minutes or until potatoes are tender.
- In a medium saucepan, melt the remaining butter (3 tbsp) and add the flour. Cook for 3-5 minutes stirring constantly until bubbly. Stir in the milk, salt, and pepper and mix until smooth, then add the shredded cheese. Cook and stir until the cheese melts.
- Add cheese mixture to the soup, bring to a slow boil, reduce heat to low, and stir for 2 minutes.
- Remove from heat and blend in sour cream.
- Serve and enjoy!
