Blueberry Cream Cheese Cobbler
This no-fuss recipe is simple and delicious. Add lemon zest or a sprinkle of fresh chopped basil to kick up the flavor.
Yield: 10 servings
Ingredients
- ½ cup unsalted butter (4 oz)
- 4 oz cream cheese, softened
- 1 cup plus 2 tbsp sugar, divided
- 1 ½ cups all-purpose flour
- 2 tsp baking powder
- ½ tsp kosher salt
- 1 ½ cups The Farmer’s Cow Whole Milk
- 1 tsp vanilla extract
- 6 cups fresh blueberries (about 1 ½ lbs)
- 1 tbsp powdered sugar
Instructions
- Preheat oven to 350 degrees. Put butter in a 13 x 9 glass or ceramic baking dish and place in preheating oven until butter is melted. Remove from oven and swirl until butter completely coasts the bottom of the dish.
- Combine the softened cream cheese and 2 tbsp sugar in a medium bowl. Mix by hand until smooth and set aside.
- Whisk the remaining dry ingredients together in a large bowl. Gradually add milk and vanilla, whisking until just combined. The batter will be thin.
- Pour batter over melted butter in the prepared baking dish. Do not stir butter into the batter. Arrange blueberries in a single layer over the batter and scatter spoonfuls of cream cheese mixture over blueberries.
- Bake in preheated oven until the top is golden and the edges are bubbling, about 50 to 60 minutes. Let cool on a wire rack until ready to serve dusted with powdered sugar.
