Blueberry Baked Oatmeal
Yield: 4 Servings
Ingredients
- 2 cups uncooked old-fashioned rolled oats
- 1 1/2 teaspoons cinnamon
- 1 teaspoons baking powder
- 1/4 cup sugar
- 2 cups The Farmer’s Cow milk
- 1 The Farmer’s Cow eggs
- 2 tablespoons butter, melted
- 2 teaspoons vanilla extract
- 1 1/2 cups fresh or frozen blueberries
- 2 bananas, peeled and sliced
- 4 tsp flax meal
Directions
- Pre-heat oven to 350 degrees. Grease a 13×9” pan.
- In a large bowl, mix the oats, cinnamon, baking powder, and sugar together. Set aside.
- In another large bowl, whisk the milk, eggs, butter, and vanilla together.
- Fold the wet ingredients into the dry ingredients and stir until combined.
- Fold in the blueberries.
- Layer sliced bananas on the bottom of the greased pan.
- Pour the batter over the bananas and spread evenly.
- Sprinkle with the flax meal.
- Bake, uncovered, for 35-40 minutes and until the top is golden.
- Cool for 10 minutes before serving.
