Blueberry Baked Oatmeal

Yield: 4 Servings

Ingredients

  • 2 cups uncooked old-fashioned rolled oats
  • 1 1/2 teaspoons cinnamon
  • 1 teaspoons baking powder
  • 1/4 cup sugar
  • 2 cups The Farmer’s Cow milk
  • 1 The Farmer’s Cow eggs
  • 2 tablespoons butter, melted
  • 2 teaspoons vanilla extract
  • 1 1/2 cups fresh or frozen blueberries
  • 2 bananas, peeled and sliced
  • 4 tsp flax meal

Directions

  • Pre-heat oven to 350 degrees. Grease a 13×9” pan.
  • In a large bowl, mix the oats, cinnamon, baking powder, and sugar together. Set aside.
  • In another large bowl, whisk the milk, eggs, butter, and vanilla together.
  • Fold the wet ingredients into the dry ingredients and stir until combined.
  • Fold in the blueberries.
  • Layer sliced bananas on the bottom of the greased pan.
  • Pour the batter over the bananas and spread evenly.
  • Sprinkle with the flax meal.
  • Bake, uncovered, for 35-40 minutes and until the top is golden.
  • Cool for 10 minutes before serving.
