Yield: 2 dozen
Ingredients
- 2 pounds russet potatoes, peeled and quartered
- 3 cloves garlic, peeled and minced
- 1 cup The Farmer’s Cow whole milk
- 2 tbsp butter
- Salt and pepper to taste
- 2 Farmer’s Cow large eggs
- 2 cups panko breadcrumbs
- Cooking spray
Instructions
- Bring a large pot of salted water to a boil, add potatoes, lower heat to medium, and allow to boil at a low simmer for 15 to 20 minutes until potatoes are fork-tender.
- Drain potatoes and set aside. Melt butter in the pan, add garlic and cook for 2 to 3 minutes.
- Add milk and cooked potatoes and mix vigorously with a potato masher or an electric mixer until potatoes are smooth and creamy. Season with salt and pepper and set aside to cool completely.
- Crack The Farmer’s Cow eggs in a shallow bowl and whisk; fill another shallow bowl with panko breadcrumbs.
- Using cold mashed potatoes, use a cookie scoop or tablespoon to form balls with the mashed potatoes, using 1 rounded tablespoon of mashed potatoes for each tot bite.
- Roll each mashed potato ball in the egg wash then coat in the breadcrumbs.
- Place each tot on a plate and refrigerate for at least 30 minutes, up to overnight.
- Spray tot bites and air fryer basket with cooking spray.
- Air fry at 375 degrees for 5 to 7 minutes, until golden brown.
- Serve with dipping sauces such as ranch dressing, ketchup, sour cream, or siracha.
