Air Fryer Potato Tot Bites

Make-at-home tots are a winning game day snack. Kick up the flavor with tasty seasonings and mix-ins like chives, bacon bits, diced ham, or shredded cheese.

Yield: 2 dozen

Ingredients

  • 2 pounds russet potatoes, peeled and quartered
  • 3 cloves garlic, peeled and minced
  • 1 cup The Farmer’s Cow whole milk
  • 2 tbsp butter
  • Salt and pepper to taste
  • 2 Farmer’s Cow large eggs
  • 2 cups panko breadcrumbs
  • Cooking spray

Instructions

  • Bring a large pot of salted water to a boil, add potatoes, lower heat to medium, and allow to boil at a low simmer for 15 to 20 minutes until potatoes are fork-tender.
  • Drain potatoes and set aside. Melt butter in the pan, add garlic and cook for 2 to 3 minutes.
  • Add milk and cooked potatoes and mix vigorously with a potato masher or an electric mixer until potatoes are smooth and creamy. Season with salt and pepper and set aside to cool completely.
  • Crack The Farmer’s Cow eggs in a shallow bowl and whisk; fill another shallow bowl with panko breadcrumbs.
  • Using cold mashed potatoes, use a cookie scoop or tablespoon to form balls with the mashed potatoes, using 1 rounded tablespoon of mashed potatoes for each tot bite.
  • Roll each mashed potato ball in the egg wash then coat in the breadcrumbs.
  • Place each tot on a plate and refrigerate for at least 30 minutes, up to overnight.
  • Spray tot bites and air fryer basket with cooking spray.
  • Air fry at 375 degrees for 5 to 7 minutes, until golden brown.
  • Serve with dipping sauces such as ranch dressing, ketchup, sour cream, or siracha.
