From an old church recipe book from NH and credited to Mabelle Summers, this is a great appetizer for entertaining around the holidays because it can be made ahead and served at room temp, or warmed slightly.

- 4 Tbls. Butter
- 3 The Farmer’s Cow Eggs
- 1 cup flour
- 1 cup The Farmer’s Cow Milk
- 1 (10 oz.)Pkg. Frozen Spinach (thawed and drained)
- 1 small onion (chopped)
- 1 tsp. salt
- 1 tsp. baking powder
- 1 pound grated cheddar cheese
- 1/2 cup mushrooms (sliced)
In a 9 X 13 inch pan, melt butter. Mix remaining ingredients together and spoon into pan. Bake at 350 degrees for 35 minutes. Cool slightly before cutting into squares.Serve hot or at room temperature.
