A great twist on traditional rice pudding, with the addition of Amaretto – you can’t go wrong!

Cooking Time: 45 minutes
- 1/2 gallon The Farmer’s Cow milk
- 1/4 pound butter
- 3/4 cup sugar
- 1 cup rice
- 1 The Farmer’s Cow egg
- 1/2 pint The Farmer’s Cow heavy cream
- 1 tsp. vanilla
- 1 1/2 ounces amaretto
Combine the first three ingredients and bring to a slow boil. Add the rice. Lower the heat to simmer and cook 45 minutes, stirring often.
Beat together the egg, cream, vanilla and Amaretto and add to the cooked rice. Mix thoroughly. Put in a serving dish and let cool. Sprinkle with cinnamon. Refrigerate.
