A Connecticut boy, James Arena grew up in New Britain attending New Britain High School where he discovered his passion for the arts. An introduction into the kitchen at the age of fifteen, allowed James an early answer to his calling. A graduate of the Center for Culinary Arts in Cromwell CT, James launched his career at many notable restaurants in the Hartford area.
[one-half-first]Chef Noel Jones recruited the talented pastry chef to take over the operations at the award winning restaurant, The Polytechnic Club. Today, Chef Arena has helped to create what many in Connecticut and New England, are claiming to be one of the most exciting fine dining experiences, The Polytechnic ON20 Restaurant.
Why James Arena Uses The Farmer’s Cow Products
With several team members at On20 having worked in European kitchens, the Farmer’s Cow milk and cream shares the most in common with the high end European dairy products found in some of the most exclusive restaurants. “There are dairy farms all around us in Connecticut, we as chefs would be foolish not to use this milk. Its not about being local, its about making sense.”
